Susan completed her doctoral degree at the University of Denver’s Josef Korbel School of International Studies in 2014 with an emphasis in international political economy, the politics of development, food studies, public health nutrition, and the role of “place” on health. Her regional focus is Latin America and she specializes in mixed methods (quantitative and qualitative, including ethnographic methods) research. Her dissertation is entitled “Foodscapes, Foodways, and Nutrition Transitions in Urban Mexico." She currently is a Postdoctoral Fellow at the Stone Center for Latin American Studies at Tulane University.
