Susan is completing a Ph.D. at the University of Denver’s Josef Korbel School of International Studies with an emphasis in international political economy, the politics of development, food studies, public health nutrition, and the role of “place” on health. Her regional focus is Latin America and she specializes in mixed methods (quantitative and qualitative, including ethnographic methods) research. Her dissertation is entitled “Foodscapes, Foodways, and Nutrition Transitions in Urban Mexico." She teaches Introduction to International Political Economy and Globalization and the Politics of Development at the University of Colorado at Denver as well as Feeding the World: The Politics and Economics of World Food and Agriculture at the University of Denver.
